This tea is known as brown tea; it is the most complicated tea to make. Repeated wilting and shaking in bamboo baskets assure that it will arrive at the perfect state so as to capture the essence of the leaf. Oolong is semi-oxidized and it varies in color from pale orange to brown. Oolong tea has polyphenol, an antioxidant which has a protective effect on several diseases, including some cancers and forms ofheart disease. The Chinese believe that this tea is the most "health-giving" tea.
